1 1/4 cups of evaporated milk
1 prepared pie crust

Preheat your oven to 425°F (220°C).

In a large mixing bowl, combine the pumpkin puree, sugar, cinnamon, ginger, and cloves.

Beat in the eggs, then gradually stir in the evaporated milk.

Pour the mixture into the prepared pie crust.

Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 40-50 minutes or until a knife inserted into the center comes out clean.

Allow the pie to cool before serving.

Pumpkin Soup

Ingredients:

2 cups of pumpkin puree
1 onion, chopped
2 cloves of garlic, minced
4 cups of vegetable broth
1/2 teaspoon of ground nutmeg
1/4 teaspoon of ground ginger
Salt and pepper to taste
2 tablespoons of olive oil
Sour cream or plain yogurt (for garnish)
Fresh parsley or chives (for garnish)

Instructions:

In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until softened.

Add the pumpkin puree, vegetable broth, ground nutmeg, and ground ginger. Stir well.

Bring the mixture to a simmer and let it cook for about 20-25 minutes, stirring occasionally.

Use an immersion blender or a regular blender to puree the soup until smooth.

Season with salt and pepper to taste.

Serve hot, garnished with a dollop of sour cream or plain yogurt and a sprinkle of fresh parsley or chives.

Pumpkin Loaf

Ingredients:

1 3/4 cups of all-purpose flour
1 1/2 teaspoons of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of salt
1/2 teaspoon of ground cinnamon
1/4 teaspoon of ground nutmeg
1/4 teaspoon of ground cloves
1/4 teaspoon of ground ginger
1/2 cup of unsalted butter, softened
1 cup of granulated sugar
2 large eggs
1 cup of pumpkin puree
1/2 teaspoon of vanilla extract

Instructions:

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and spices (cinnamon, nutmeg, cloves, and ginger).

In a separate large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the pumpkin puree and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Pour the batter into the prepared loaf pan.

Bake in the preheated oven for 60-70 minutes or until a toothpick inserted into the center comes out clean.

Allow the pumpkin loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
